Why Paso Paso is truly different
Direct trade sounds great, and it's often a step in the right direction. But what if we really did things differently? What if the coffee farmer didn't just supply, but also decided?
That's precisely where Paso Paso came from. Based on the belief that real change only happens when farmers aren't on the sidelines, but are at the table. Not in theory, but as full partners with co-ownership.
The brand is built on equality, respect, and a simple yet powerful vision. No polished slogans. No greenwashing. Just honest collaboration on coffee that's better for everyone in the supply chain.
Who is behind Paso Paso?
Paso Paso was founded by a group of exceptional coffee farmers, along with Bram de Hoog. Bram spent years traveling the world as a specialty coffee buyer, sourcing coffee for major roasters. He worked directly with farmers, witnessed exciting projects, and tasted countless top-quality coffees. But he also recognized a persistent problem: even within specialty coffee, power still resided with the roasters, not the farmers who actually worked in the fields.
That's why he decided to do things radically differently. He invited some of the world's best farmers to join him in establishing a distillery, in which they would co-own. These include:
- Diego Robelo
- Diego Baraona
- Jorge and Alex Vega
- Hester and Dawit Syoum
- Silvio Sanchez
Together they form the core of Paso Paso, a brand literally built by the people who grow the coffee.
Paso Paso's Vision in Their Own Words
When asked about their core values, they describe it very simply.
Equality and respect. No empty promises and no greenwashing. Simply working with the farmers as full business partners to get the most out of the coffee and create as much value as possible for the entire supply chain.
This is the new standard in specialty coffee. And it works. The coffees are more transparent, more honest, and more flavorful than ever.
A deep bond with origins
Bram tells that his personal love for coffee started in Nicaragua.
For me, it all started in Nicaragua, and I still feel a strong connection to that country. With its fantastic coffee and wonderful people, it's a shame this origin isn't offered by more roasters.
Paso Paso works with coffees from countries including Nicaragua, Costa Rica, El Salvador, and Ethiopia. Varied processing methods, such as washed, natural, and anaerobic, make the selection broad and exciting. Think fruity Ethiopian naturals to rich chocolate flavors from Central America.
How They Make Coffee at Paso Paso
When asked about my favorite brewing method, a smile appears.
I'm currently using the Origami dripper the most. It's reliable for filter coffee and simply beautiful. But the Chemex remains my first love. Perfect for larger groups and has a bit of a showpiece for those unfamiliar with it.
This love of filter coffee is reflected in their roasting style: light to medium roast, just enough to let the natural flavors shine.
Coffee with a story and a face
Paso Paso's packaging is colorful and rich in symbolism. It evokes the landscapes, patterns, and cultures of the farmers who create the coffee. Each bag features transparent information such as altitude, varietal, processing, and sometimes the family name. No secrets, no marketing gimmicks. Just honest coffee with a clear provenance.
Who is Paso Paso coffee perfect for?
For anyone who doesn't just want to drink coffee, but also wants to understand it. For coffee lovers who crave a story behind every bean. For filter drinkers who appreciate clarity and fruit. For espresso fans who seek nuance. And above all: for anyone who wants to experience what coffee tastes like when farmers finally have a say.
