How do you recognize really fresh coffee beans?

When buying coffee, always look at the roasting date, not the expiration date. Only then will you know how fresh your beans really are.

Fresh coffee beans smell intense, are dry but slightly oily (especially with dark roast), and release a full, aromatic scent when ground. They are packed in valve bags so that the gases can escape, but no oxygen can enter.

A lot of coffee from the supermarket was roasted months ago, and you can taste it: flat, bitter, musty. At Koffie Kenner, new batches are roasted every week, and the difference is enormous.
