Paso Paso is a coffee roastery in Hannover, founded by coffee farmers from Ethiopia, Costa Rica, Nicaragua and El Salvador, together with Bram de Hoog. Farmers are co-owners, which ensures fair profit distribution. Transparent, sustainable and with an eye for quality. With a focus on quality and transparency, Paso Paso won the SCA Best Branding Award in Copenhagen.

Direct trade sounds great and is often a step in the right direction. But what if we really do it differently? Paso Paso was founded on the belief that real change only happens when coffee farmers not only participate, but also have a say in decision-making. To find out more about this, we asked a few questions to Paso Paso, our new partner!

Who are the people behind Paso Paso! and how did it come to life?

“Paso Paso consists of a group of coffee farmers and Bram de Hoog. As a specialty coffee buyer, Bram traveled the world to buy coffees for many well-known roasters and to work with farmers. This showed that even within specialty coffee, the roasters had many advantages, while the farmers did not. That is why an idea arose to establish a roastery owned by the farmers. For this, Bram invited the best farmers: Diego Robelo, Diego Baraona, Jorge & Alex Vega, Hester & Dawit Syoum and Silvio Sánchez.”

How would you describe Paso Paso's vision of coffee in a few words?

“Equality and respect.

No empty promises and greenwashing, just working with the farmers as full business partners to get the best out of the coffee and create the most extra value for the entire chain.”

Is there a coffee country that you feel a special connection to, and what makes it so special to you?

“For me it all started in Nicaragua and I still feel very connected. With great coffee and people it’s a shame this origin isn’t offered by more roasters.”

What is your personal favorite brewing method and why this one?

“I currently use the origami dripper the most, reliable for making filter coffee, and just very beautiful. But the chemex remains my first love, perfect for larger groups and still a bit of a show element for people who don't know it yet.”

Paso Paso works with various processing methods such as natural, washed and anaerobic fermentation, depending on the farmer and the desired flavor profile. These methods bring out unique flavors such as tropical fruit (guava, papaya), citrus, chocolate and floral notes. Each coffee has its own character, formed by origin, variety and fermentation process.
