What is specialty coffee?

Specialty coffee is coffee of the highest quality, judged by its flavor, origin, processing, and roasting. To be officially recognized as a specialty coffee, it must score at least 80 out of 100 points on the Specialty Coffee Association (SCA) quality standard.

This means no defective beans, optimal ripeness at harvest, careful processing, and a roast that brings out the bean's unique flavor notes. You'll taste the difference in the cup: more complex, brighter, with notes of red fruit, citrus, chocolate, or flowers, for example.
